For the last week and a half I’ve been taking part in a health challenge. One of the requirements of this challenge is that the participants aren’t allowed to eat any processed sugars or treats. For 6 weeks….6 long weeks of no sugary treats. Is that even possible?!
To curb my cravings, I whipped up an easy fat ball recipe that basically caters to those sweet tastes.
What I did was…
1/2 cup almond butter placed in a food processor with a handful of sunflower seeds and a handful of pumpkin (more may be used if mixture still does not form into balls), and 2 tbsp of cocoa or cocao powder. Process until the mixture forms a thick paste that can be rolled into balls. Place balls on cookie sheet and freeze for 30 minutes to an hour.
While fat balls are freezing, melt 1.5oz 100% dark chocolate with 1 tsp grass fed butter or coconut oil. Drizzle over fat balls and place back in the freezer to harden.
Enjoy with a mug of coffee, glass of almond milk, or a cup of steamy tea!
