Quick Banana Sweetened Paleo Muffins

Ever wonder if its possible to make a savory treat without any added sugar other than fruit? Well, your wondering can stop now! These muffins, though not overwhelmingly sweet, satisfy the craving for a treat while keeping the carbs low and the sugar even lower.

The dark chocolate chunks add a nice chocolaty bite and give the muffins an added feel of decadence. My husband says they taste ever so slightly “hearty” with a luscious finish (don’t you love his romantically poetical description?!).


One of my favorite things about these lill’ nuggets is that not only do they taste yummy, they are also chalk full of protein. With 6 eggs, each regular sized muffin has 1/2 an egg. Doesn’t sound like much, but compared to a normal muffin recipe that touts only 1-2 eggs, it’s a whole heck of a lot more.

Because they are made with coconut flour, they pack a good punch of fiber as well. No sugar, lots of protein, high fiber. WIN WIN WIN I’d say!


These are a great grab n’ go breakfast option with a matcha latte or a cup of joe. They also work as a nice after dinner treat. My favorite way to eat them is with some Kerry Gold Grass-Fed butter. Delish!

Easy Banana Sweetened Paleo Muffing

  • Servings: 12-18

1/2 cup coconut flour

  • 1/2 tsp sea salt
  • 1/2 tsp baking soda
  • 6 eggs
  • 1/3 cup nut butter of choice or peanut butter
  • 1/3 cup melted palm shortening, coconut oil or butter
  • 1 Tbsp vanilla
  • 1 1/2  mashed bananas
  • 1/3 cup coconut flakes
  • 1/3 cup chopped 100% dark chocolate
Preheat oven to 350° and grease either a 12 cup muffin tin or a 24 cup mini muffin tin.
Place coconut flour, sea salt & baking soda in a kitchen aid mixer and blend together. Add to mixer eggs, palm shortening, vanilla, mashed banana, and coconut flakes then thoroughly mix. Scoop batter into muffin tins to 3/4 full for average size muffins or fill to top for extra large ones. Bake large muffin tin for 20-30 minutes and 12-15 minutes for miniature muffins. When done, let it cool and serve with a nice dollop of grass fed butter!
