Lemon Key Lime Cookie Bites

Ask any close friend of mine what my favorite dessert flavor is and they will most certainly tell you lemon or citrus. Lemon bars are most certainly going to be on the menu if it’s my birthday, and I will find a way to incorporate it into almost anything. Key lime is also a high priority in my life! Seriously, when I visited Florida this past April I made sure to order it in whatever I could. I even tried a key lime flavored coffee. Yep, it was good.  Lemon pepper chicken is also so so delish. Lemon and lime squeezed over tacos or fajitas makes the dish. Need I say more? Oh wait, I once drove all around Seattle hunting for a small bakery that had been featured on Food Network just to try their tart cherry lemon bread. I have a major thing for lemon and key lime!

I mean, who wouldn’t love these flavors? Both refreshing and satisfying with that perfect amount of happy tartness when used tastefully in any dish or dessert, lemon and key lime are usually crowd pleasing delights. I made these little treats to satisfy that craving all while keeping the processed sugars out and keeping them raw and high in healthy fats. They are so easy a child could make them.

Ingredients

1/4 cup cashews

1/4 cup walnuts

1/4 cup sunflower seeds

1/4 cup coconut flakes unsweetened

1 heaping tablespoon coconut oil

2 tbsp ground flax seed

1/4 cup golden raisins

1/8 cup juice of key lime  

6 drops lemon essential oil

What I did

In my Cuisinart food processor  I placed all the nuts and seeds along with the coconut oil and blended until it formed a textured ball. I then add the flax seed, golden raisins, key lime, and lemon essential oil  and processed until well mixed in. Forming mixture into balls, I rolled them in coconut flakes and placed in freezer for 2 hours before enjoying.
